Exclusive Commercialisation Rights to the Hidden TreasuresTM Healthy Biscuit Snack - 16-0632

In 2017, Dr Jennifer Wood of the NSW DPI, identified a gap in the market for healthier snacks that still tasted good; the target market being children’s lunch boxes. In 2018 Dr Wood and her team formulated and validated (using sensory perception testing of children) a prototype snack that is non-allergen, tastes great. The prototype is novel, non-allergenic (no gluten, dairy, egg, nuts, soy, lupin or sesame), vegan (plant based protein and ethically sourced ingredients), all natural (contains no artificial ingredients) and clean-label, baked (not fried), prebiotic to support healthy gut bacteria, convenient and shelf stable, and they taste great. A 23 g serving size contains 1/3rd of a serve of vegetables and legumes/beans, is 54% fruit, vegetable and/or legume, and satisfies nutritional claim criteria for low fat and low salt with a Healthy Star Rating of 4. Initial taste testing of 53 students found that 96% wanted our biscuit in their lunch box, and 78% wanted it 2 or more times per week.
